Gluten Free Flourless Peanut Butter Cookies

My son has Celiac Disease.  This is something we did not find out until he was almost 18 years old.  Anyway, he is off to college now so, I am always looking for recipes for gluten free food that he can eat when he comes home on breaks. 
 
Here is one I found on  Food Network
 
 
Flourless Peanut Butter Cookies

Ingredients


  • 1 cup natural peanut butter
  • 1 cup sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • Coarse sea salt

Directions

Preheat the oven to 350 degrees F and place racks in the upper and lower third of the oven.
In a medium bowl, mix the peanut butter, sugar, egg and vanilla until well combined. Spoon 1 tablespoon of mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
Bake until golden around edges, about 10 minutes, switching the position of the pans halfway thorough baking. Transfer to racks to cool. Repeat with the remaining dough.

We just can't say enough good stuff about Tuscan.  It is definitely one of our favorite places to eat!  We ate here tonight and of course, the food was awesome and the service excellent.  We give this a restaurant a  AAA rating!   Tonight at the end of our meal, our daughter was treated to complimentary cotton candy and my husband and I got to sample "Cocoa Divine Wine".  Hmmm, I think I found a new drink!

Nothin' Fancy Cafe

 My husband and I were looking for a place to get lunch the other
day.  I said "I want to go somewhere like a diner with a hometown
feel."  So, we were racking our brains trying to think of a place.
Well, it hit me as we were in Sherrill, NY(which is just a
couple of miles from Vernon, NY), "Let's try Nothin' Fancy
Cafe."  I have only been there once and it was about 18 years ago. 
My husband had only been there once a long time ago too.  For some
reason, we never think of Nothin' Fancy when we want to go eat. 
 
The Cafe had just what we were looking for.  It has a casual,
small, hometown feel to it.  The food was delicious and the service
was great! I had a Chicken Patty Sandwich with fries and My
husband had a Bacon Cheeseburger with fries.  We both had sodas.
We only paid $18 and some change for our meals. 
 
So, when you are looking for a place to eat that offers a small
hometown feel, good food and great service, check out Nothin'
Fancy.  You will be glad you did.

I have never been so disappointed in my life.  Nine of us went here for our New Years Eve dinner.  We were there for an hour before we got our menus.  Then, it took forever for our food to come out.  It is not like they were busy.  The dining area can only accommodate 50 people.  There was probably 30 people there. 
 
So, the menu was limited, the prices were outrageous and the selections sucked.  On the back of the menu they listed chicken wings for .50 cents a piece.  So, we asked for the wings, the waitress says "They aren't serving wings tonight".  We said well, it is on the menu.  She says "I will check and see if they are making them".  She came back and said "yes".  So, 4 of us ordered the wings.  One member of our party didn't order anything because the choices were so limited that there was nothing she wanted. 
 
Now, we tell the waitress that we were ready for the checks.  She asks if they were separate checks, we said yes.  She says "Well, I didn't write them up that way."  I said "Well, you should have asked that before you took the orders".  So, we get the check.  One item that someone ordered was priced at $10, on the check it said $12.  She took care of that.  We were overcharged for the wings.  They were supposed to be $10 at .50 cents each for  20.  The waitress says "Oh no, that is only on NFL nights" Whoa, then that should not have been priced that way on the menu.  She refused to fix it.  Then to top it all off, they added an automatic 18% gratuity to the bill.  Really?  My 13 year old could have given better service.  The place is a joke and we will never go back there.
